Nerolidolul contribuie la aromele lemnoase, florale, fructate și pământii ale multor plante, fructe și ierburi culinare. În general, combinația acestor note creează un miros asemănător celui de coajă proaspătă de copac.
Multe plante produc nerolidol ca și metabolit secundar. Poate fi găsit în bulbii, semințele, frunzele și părțile aeriene ale multor specii. Terpena joacă un rol protector împotriva prădătorilor ierbivori, care ar devora plantele.
